- Stew chicken pieces for 20-30 min. with following ingredients, and add
- a handful of basil leaves (leave the soft stems in) for the last 15 min.
- Save some leaves for the last minute for color.

- - 1 lb chicken (if you don't chop it up, for example, leaving drum
- sticks as they are, slice a few deap openings)
- - water to cover 2/3 of the chicken in your pot/wok
- - a few slices of ginger (dried, fresh)
- - 1-2 Tbsp dark sesami oil (light sesami oil won't have the flavor)
- - 6-8 Tbsp soy sauce
- - 2-3 Tbsp sugar (ice cube sugar, brown, red, white...... anything)
- - 1-2 Tbsp cooking wine

- Turn the chicken a few times in the stewing process.
- After chicken is done, if too much sauce remain, thicken by turning up
- the heat. The sauce is GRRRRREAT on rice.

- P.S. If you use a wok, stir fry ginger in sesami oil first, add chicken,
- stir fry, then, add water and the remaining ingredients.
